Tiramisu

MMmmm...Tiramisu.  Tiramisu in italian translates to "pick me up".  It's a good definition for it because when I take a bite out of this dessert, everything just feels better.  It's not a hard dessert to make, but I would suggest that if you do make this dessert, that you actually go and purcahse the marscapone cheese to make it with.  A lot quick tiramisu recipes do not call for it.  Marscapone cheese is not hard to find these days, so go out there and grab a tub.  Marscapone cheese is an italian cheese made with cream.  I made this cake for a customer who wanted a special dessert for her mother.  The ladyfingers were store bought, although you can make them from scratch if you have the time.  Have fun!!!!

Tiramisu Recipe

  • 6 egg yolks
  • 1  cup white sugar
  • 1 1/4 cups mascarpone cheese
  • 1 3/4 cups heavy whipping cream
  • 2 packages ladyfingers (20 went around my cake...and probably another 10-15 for the inside)
  • 1/3 cup coffee flavored liqueur 
  • 1 teaspoon unsweetened cocoa powder, for dusting

 The How To Part:

1. Boil a pot of water

2. Combine the egg yolks and sugar together, then set it over the pot of water making sure the bottom of the bowl does not touch the water (double boiler)

3. Whip until the mixture is a pale yellow (takes about 5-10 minutes by hand....so you can actually pour the mixture into a mixer, or use a handheld mixer and whip until pale yellow)

4. Add the marscapone to the egg yolk mixture.  

5. Using a seperate bowl, whip the cream until stiff

6. Gently fold the whip cream intot he egg yolk and marscapone mixture

7. Line the bottom of a glass pan with lady fingers, or if you want to make it into a cake, use an 8 inch cake pan.  Line it with plastic wrap so that it folds over the edge of the pan.  So just cut the lady fingers any way you want until it cover the whole bottom of the pan. 

8. Brush the coffee liquor over the ladyfingers.  You can omit this and use strong espresso instead.

9 Spoon half of the marscapone mixture on top of the lady fingers. and repeat steps 7-8. 

10. Put it in the refrigerator overnight.  If you want to make the cake, freeze it!

11. Now take out the tiramisu and top it with the cocoa powder. Then CONSUME!!!!

*for the cake, pull the cake out of the cake pan.  spread a little whip cream on each individual ladyfinger and place it around the cake.  To make sure the lady fingers don't come apart if you are transporting it, wrap a ribbon around the cake like I did.  Dust with coco powder and congratulations you just made tiramisu..a fancy one at that!!

Mah Jong

Mah Jong cakes have been a popular number in my creations.  For those who don't know, Mah Jong is a popular tile game.  It requires a lot of strategy and luck.  I love the look of mahjong tiles.  They look like shiny glass tiles.  They come in all different sorts of sizes and colors. 

For my grandfathers 80th birthday I decided to create a massive mah jong cake for him.  It was huge!  The tiles were actually made out of poured sugar.  I actually trained my brother to help me create those little jems.  He actually loved the process!  They came out amazing!

        

 

 This other little number was for a lady that loved playing mahjong as well!  This one was a little different.  The mah jong tiles were made using fondant.

Babies

To celebrate a new life is such an incredible event.  What better to way to celebrate this kind of event then to eat cake!  I've made several baby shower cakes, and would like to share with you a couple that stood out!  One was for my dearest friend.  I decided that a cute little baby crib would be perfect for her baby shower!  

This was a multi layered carrot cake with cream cheese frosting.  It was moist and delicious!  The crowd enjoyed it immensely. 

This one was for a clients brother and sister-in-law.  It was a vanilla sponge with lemon buttercream.  All the characters were edible, but who would want to eat the adorable figures?  I told them they can store the figures for ever!! Just keep it in a dry cool spot!!!

Shoes..a girls best friend

I love shopping for shoes.  I rarely shop for clothes..but I love pretty shoes.  So to make an edible shoe for a client was really exciting.  Not only was it pretty to look at...it was completely edible.  These were some of my little creations for past clients.  yay for shoes!

This was a fondant covered vanilla cake.  The shoe was to replicate the clients sisters favorite gucci shoe!  It took me forever to figure out atually how to replicate it..but it all went well!!

This cake was for a clients youngers sisters birthday.  She really loved shoes and her favorite color is pink.  I love making girly girl cakes!! Always brings a smile to my face!

Pretty shoes and cake...what more can a girl ask for?
